DIGESTIVE BISCUITS suitable also for Vegans

200 gm. Wholemeal Flour
1/2 tsp. Salt
1 tsp. Baking Powder
40 gm. Oatmeal ( pinhead or medium)
5 tbsps Olive oil
4 tbsps Water
1-2 tbsps Milk ( Soya if possible)
30 gm. Brown sugar

If dough is not soft enough when mixed, add a little more water.

Pre-heat oven to 180 deg.C ( 160 for fan assisted ovens)
Sift flour into mixing bowl with salt and baking powder, and oatmeal.
Add oil so that the texture resmbles breadcrumbs
Add sugar, soya milk and water to produce a soft dough
Roll out on to a floured surface to about 4mm and cut with a biscuit cutter.
Bake for ca. 15-20 minutes - use finger test if necessary!

If you must shop at a supermarket ask them directly if the eggs they sell are really free-range and organic, if so ask the to tell you where they come from and the name of the farm/farmer who supplied them!
